The Joslin Diabetes Healthy Carbohydrate Cookbook

People with diabetes can enjoy a meal plan with a high proportion of carbohydrate that is low in animal protein and fat and still keep their diabetes well controlled. This new cookbook offers 175 tasty and easy-to-prepare vegetarian-based recipes.

This newest cookbook from Joslin is good news for the estimated 16 million Americans with diabetes – as well as those without diabetes who want to incorporate low-fat, high fiber, vegetarian-based dishes into their eating programs. Francis Towner Giedt and Bonnie Sanders Polin, working with the Nutrition Services Staff at Joslin Diabetes Center in Boston, offer recipes that emphasize fresh ingredients and ethnic flavors. The authors have created 175 tasty, easy-to-prepare low-fat, high fiber recipes, ranging from grilled portobello mushroom recipes to bean and pasta soup to bruschetta with several different toppings. They’ve also constructed three weeks of menus for breakfast, lunch and dinner at 1500 calories per day to encourage people living with diabetes to enjoy low-fat, high carbohydrate meals that provide nutrients needed to stay healthy. Each recipe includes nutritional values.
