Spiced Apples with Low-Fat Granola and Yogurt

Ingredients:

1 large Granny Smith apple, cored and thinly sliced
1/4 cup unsweetened apple juice
1 teaspoon fresh lemon juice
1/4 teaspoon grated lemon zest
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground allspice
2 tbsp. plain non-fat yogurt

In small saucepan combine the apple, apple juice, lemon juice, lemon zest and spices.  Bring to a boil.  Lower the heat, partially cover, and simmer until apples are tender, about 8-10 minutes.

Spoon the apples with their sauce into 2 cereal bowls, dividing equally.  Top with yogurt and sprinkle with granola.

Makes 2 servings.

PER SERVING:  134 calories, 1 g fat (0.1 g saturated fat), 2 g protein, 31 g carbohydrate, 3 g fiber, 36 mg cholesterol.
